Roasted root vegetables

Dined at craft tonight. The roasted jerusalem artichokes and roasted market onions were memorable. Will most definitely add to my Thanksgiving menu. Simple, clean food is chic--and the best thing about the later dish is that there is no need to go trawling for a recipe--the onions are naturally sweet--all you need is a bit of olive oil, a tiny bit of butter, sea salt, pepper, and a cute mini staub so you can serve straight out of the oven. Heaven.
